simple lavender syrup recipe

i got a bag of lavender recently at the farmer's market and i've been so excited to use it. i LOVE lavender flavored food. salt & straw's honey lavender ice cream is my absolute ultimate favorite and i'm excited to try my hand at making my own kind. 

the other day i took on a simpler task and made lavender simple syrup to add to my gin & tonics. i used this recipe from a beautiful mess and it happily turned out for me! i have adjusted it to what i think tasted best for me.

SIMPLE LAVENDER SYRUP
1 1/2 teaspoon dried or fresh lavender buds
1 1/2 cups sugar
1 cup water

their original recipe was too sweet for me and i didn't get enough lavender flavor with it.

combine all ingredients in a small pot on the stove. simmer on medium heat until the sugar is all dissolved, around 10 minutes. use a strainer to remove the lavender buds. it's that easy!

now have some friends over for coffee or evening drinks and sweeten up your night with this easy lavender touch! so yum. i recommend making lavender gin & tonics. they have them at our favorite dive bar, my father's place, and now i'm excited to drink them in the comfort of my home. :) and as much as i want. :) :)
